Njammies Quick Answers – Cookies

A cookie doesn't have to shout sugar.

Njammies Cookies leave room for the other ingredients to be noticed too — cocoa, rooibos, citrus, grains and all the little flavours and aromas that make each recipe its own.

They're not overly sweet. Some are crisp, some a little more rustic, but each one is made to give you more to discover than sweetness alone.

Cookies Quick Answers

How do we make our Njammies Cookies?

Each recipe is mixed and shaped in small batches, then baked until it reaches the texture we're looking for. Some get a little extra time in a warm oven to dry further, and some receive their finishing touch afterwards — like the homemade chocolate drizzle on our Choc-a-lots.

Why aren't our cookies overly sweet?

Because sweetness isn't meant to be the whole story. We use ingredients such as fruit, honey or coconut sugar depending on the recipe, but leave room for cocoa, rooibos, citrus, grains and other flavours to come through. You may notice the aroma, texture and lingering flavour just as much as the sweetness.

Why can the texture vary?

Real ingredients and small-batch baking can bring little differences. A cookie may be slightly crisper, softer or more rustic from one batch to the next. Thickness and drying time play a part too — we look for a delicious texture rather than identical factory-made cookies.

Why do some cookies get extra drying time?

Baking gives the cookies their structure, but some recipes benefit from a little more time in a warm oven afterwards. That gentle extra drying helps us develop the texture we're after without simply baking them harder or hotter.

How should I store my Njammies Cookies?

Keep them well sealed in their packet or transfer them to an airtight container. Store them somewhere cool and dry, away from heat and moisture. Once opened, close them up well again to help protect their flavour and texture.

What makes each Njammies Cookie different?

Choc-a-lots is our deeply chocolatey one, made with dark cocoa and finished with a drizzle of our homemade chocolate. Chocolate gets the spotlight here, without making the cookie overly sweet.

Rooibos Citrus brings together rooibos and citrus, with little pieces of kumquat adding their distinctive flavour. It’s aromatic, gently sweet and rather unlike an everyday cookie.

Sweet Potato Shards are the odd ones out — and quite happily so. Made from sweet potato, arrowroot, coconut oil and black sesame, they’re slowly baked and dried. Thin pieces can become crisp while thicker ones may stay more leathery. They aren't quite a cookie, a crisp or a sweet, but because they're oven-baked, this is where they've made themselves at home.
