Njammies Quick Answers – Vegetables & Greens
There’s plenty of room for vegetables in the snack cupboard.
Kale, sweet potato and Peppadew each bring something completely different to Njammies — from leafy crunch and natural colour to earthy sweetness and a little peppery character.
We use them because of what they are and what they bring to the recipe. Sometimes crisp, sometimes chewy, sometimes savoury — vegetables don't have to behave the same way to belong here.
Vegetables & Greens Quick Answers
What vegetables and greens do we use at Njammies?
You'll find ingredients such as kale, sweet potato and Peppadew in different Njammies snacks. Each behaves quite differently — kale can become wonderfully light and crisp, sweet potato can range from crisp to chewy, and Peppadew brings its own distinctive flavour to a savoury cracker.
What makes kale work as a snack?
Kale leaves are thin and leafy, so when their moisture is slowly removed they can become wonderfully light and crisp. We remove the tough stems first, then gently coat the leaves with olive oil, lemon and seasonings before drying them at very low heat. The result is still unmistakably kale — just with a very different crunch.
Why can Kale-y Crisps lose their crunch?
Kale-y Crisps naturally absorb moisture from the air once the packet is opened. That can gradually change them from crisp to softer or a little leathery, especially when the weather is humid. Keeping them well sealed helps protect the crunch — and a few minutes at very low heat can help crisp them up again.
What does sweet potato bring to a snack?
Sweet potato brings its own earthy flavour, natural sweetness and beautiful colour. In our Sweet Potato Shards, we keep things simple and let the sweet potato remain the main character, with arrowroot, coconut oil and black sesame helping to turn it into something rather different from the vegetable that went into the oven.
Why can Sweet Potato Shards be crisp or chewy?
Thickness makes a big difference. Thinner pieces can dry further and become crisp, while thicker pieces hold onto more moisture and may stay softer or more leathery. That's part of their rustic character — we don't expect every shard to come out exactly the same.
What does Peppadew bring to our crackers?
Peppadew brings its own fruity, peppery flavour and a gentle little tang to our Chickpea Peppa crackers. Paired with smoked paprika, it gives the cracker plenty of savoury character without needing to turn it into something fiercely hot.
